The flavours of Val di Sole
The valley’s gastronomic delights are simple, yet they are steeped in
the secrets of yesteryear; it is traditional mountain fare based around
dairy products which preserve all the fragrances and aromas of hay, grass
and pure mountain air intact. Game is also plentiful, which is often
prepared with forest fruits and health-giving aromatic herbs. Without a
doubt, the strangolapreti (a type of small dumpling), gnocchi with comede
(dumplings made with wild spring spinach), capelazzi (large ravioli filled
with ricotta) monchi (soft polenta dumplings with cheese, butter and sage)
and potato cake, not to mention the barley soup and fregoloti soup are all
well worth trying. Desserts include torta de fregoloti (a crumbly almond
cake), carrot cake and the traditional strudel.
The recipe: “Torta de fregoloti”
Place 500 g. of flour, 250 g. of butter, 250 g. of sugar, 100 g. of
chopped almonds, a small glass of grappa, a sachet of raising agent and a
pinch of salt in a bowl. Mix all the ingredients with your hands until a
dry mixture has formed. Grease a cake tin thoroughly, dust it with flour
and then drop clusters of the mixture in, so that the surface looks
irregular. Place in the oven at a moderate heat for around 30 minutes,
until it looks golden and…enjoy!
Trentino produce- Mondomelinda and the dairies: unlike other areas where
the countryside produces a variety of fruits, our lands, set amidst high
mountains, have not been blessed by God. The climate is harsh, and the
land almost always slopes steeply. Nonetheless the area is a generous one:
in addition to vines- which are particularly to be found along the Adige
valley and yield renowned wines and sparkling wines of a high standard-
the hills of Val di Non are home to thousands of fruit trees. In
particular, three types of apple are grown by local farmers and those in
the lower Val di Sole: Renetta Canada, Golden Delicious and Red Delicious.
But our area also boasts deep-rooted, consolidated traditions in cattle
farming and dairy produce, and the milk is used to make wholesome products
such as milk, butter and cheese.
